Lahiri - The Drink
of Heaven

A rare drink of sugarcane, tender coconut water
and Palmyra syrup.
It was quite popular
with the women folk centuries before being
'discovered'!

Now, allow
me to tell you how to make ‘Lahiri’.

Sugarcane juice |
400 ml |

Coconut water |
500 ml |
|
Palmyra syrup (optional) |
200 ml |
|
Ginger juice |
5 ml |
|
Black pepper |
2 gms |
|
Salt |
to taste |

1.Mix all the
ingredients and chill
2.Garnish with tender coconut cream, serve chilled.
This drink is served in different
ways, in Malabar its much simple with only sugarcane juice and
ginger as ingredients, while in central Kerala its more with
coconut water and sugar cane juice and in interior parts its with
toddy.
