Prawn in Mango Curry

 

Prawn & mango curry

 

A true speciality of coastline gives a magical tangy taste taste when the best mangoes of the season goes into the dish.

Ingredients

Quantity

oil

2tbsp

mustard seeds

1 tsp

onions

2 , finely sliced

green chillies

2 , sliced

fresh ginger

1" , peeled and sliced

chiili powder

˝ tsp
 

turmeric powder

1 tsp

shrimp

1 lb

green mangoes,

2 small  peeled & chopped

coconut milk

7 fl oz

salt

to taste

1. Heat the oil in a large saucepan. Add the mustard seeds.
2. As soon as they begin to pop add the onions, green chilli, ginger and curry leaves. Cook over a medium heat for 5-7 minutes or until the onions are brown.
3. Add the chilli powder and turmeric, mix well and sauté for another 2 minutes.
4. Stir in 8 fl oz water and bring the mixture to the boil. Lower the heat and cook for 5 minutes.
5. Add the shrimp and the mangoes, then raise the heat to medium and continue cooking for another 5 minutes, stirring occasionally.
6. Lower the heat under the pan, add the coconut milk and simmer for a further 5 minutes, stirring constantly until the sauce thickens and the prawns are well cooked.
7. Add salt to taste and serve hot.
