14 oz fillets cut in 1" cubes
|

plain yogurt |

1. Heat the oil in a
large frying pan or wok. When hot add the green chilies, garlic,
ginger, curry leaves, cinnamon, cardamom, peppercorns and cloves.
2. Stir fry the mixture over a medium heat until the garlic and
ginger are brown.
3. Add the onion and stir fry until the onion is a deep golden
brown.
4. Add the tomato, ground coriander, turmeric and chili powders
and a little salt.
5. Cook for 5 minutes until the tomato breaks down to give a
thick sauce and is well combined with the spices.
6. Add the chicken to the pan and stir well, until the chicken
is covered with the sauce.
7. Pour in 8 fl oz of water and mix well. Cover and cook for 10
minutes, stirring occasionally to prevent sticking.
8. Reduce the heat to low, stir in the yogurt and mix well,
then serve.
