 Potato Koottu

 A dry and spicy preparation and a good accompaniment for Indian breads

To make 'Potato Koottu' you will need.

Ingredients

potatoes

600 gms

red chilies

6 nos

tamarind pulp

30 mls

fenugreek seeds

1 gm

mustard seeds

2 gms

salt

to taste

asafetida

a pinch

oil

for frying potatoes

Peel, wash and cut potatoes into small cubes (1/2 cm x 1/2 cm). sprinkle some salt and keep aside for 15 minutes. fry in hot oil till golden brown.

Heat a little oil, add mustard, fenugreek, whole chilies (deseeded) and asafoetida. grind to a fine paste.

Mix tamarind juice and ground masala.

Mix fried potatoes and tamarind paste.

Check the seasonings and serve hot.
