Paratha

 

 (A favourite among the Malayalis) Parathas are the most common bread available, served in almost all the hotels.

Ingredients Quantities

Flour

300 gms

Eggs

3 (lightly beaten)

Water

60 ml

Salt

1ts
Ginger

30 ml

 

1.    Make a very soft dough with flour ,eggs ,salt and  water.

2.    Knead well and divide into 12 balls.
3.    Cover with a damp cloth and leave to stand for 30 minutes.
4.    Spread out each ball on a well oiled board, pulling the edge gently
5.    with hands to stretch it out as wide and thin as possible.
6.    Dust the surface with flour and fold over and over to make a fan.
7.    Roll up the pleated dough to make a curled ball and leave to rest for 15 minutes.
8.    Use your hands to pat the ball into circles about 6 inches in diameter.
9.    Oil a pan and cook the paratha, turning so that it is golden brown on each side.
10.   Serve hot with meat curry.
11.   A very famous bread from Kerala, which goes very well with any spicy curry.

 

Did you know ??

Kerala has its own unique style of making parathas, they can be had without any accompaniment. It is the best form of food for one to carry while travelling ,the shelf life is about 48 hours and it is tasty even when served cold. But a whole lot more tastier when served hot with a crispy golden crust layer.
