Pathiri

A Malabari Tale - Malabaris consider cooking as a pre-requisite for a bride, so mothers take special importance in training their daughters.
"A convert to Islam was asked why he embraced Islam, he replied that their food items are very tasty so he thought that their religion must also be tasty !"

This is how you make 'Pathiri'.

Ingredients Quantities
Rice flour       250 gms

Water 200 ml

Salt to taste to taste

1.Sieve flour
2.Add boiling water and salt to rice flour, stir well. Roll into small balls; flatten them smearing rice flour (so that they do not stick to each other)
3.Then cook in an iron pan.

Best when served hot with a spicy chicken gravy. Pathiri is a dish prepared by the Malabaris of Kerala. These are thin rice pancakes, very light and compliments any spicy gravy served along with it.
